Sauce



  1. Cut the pork crosswise into 1/2“ thick slices. Easiest slicing partly frozen.
  2. In a small bowl, combine the rub ingredients(flour, 1 Tbsp brown sugar, salt, cumin, cardamon, and red pepper). Rub the mixture evenly over the pork pieces.
  3. In a small bowl combine the sauce ingredients(raisins, orange juice, vinegar, capers,1 Tbsp brown sugar). Stir until the sugar dissolves.
  4. In large nonstick skillet, heat the olive oil. Add the pork pieces; cook 2 min. Turn the pieces over and cook 1 min. more. Add the sauce, cook 1 min. or until the sauce thickens and the pork is done.
  5. Serving suggestion - serve with couscous cooked with chicken broth & topped with parsley.
