====== Oklahoma Onion Burgers ====== *1 lb. ground beef - preferably 20-30% fat *Kosher salt and fresh ground pepper *2 med or 1 large yellow or white onion - sliced as thin as possible *4 slices American cheese *4 soft sturdy buns *dill pickles and condiments as desired \\ - Divide the beef into 4 even balls. Mold so cohesive and tacky, Shape into balls. Refrigerate until ready to cook. - Shape each ball into disk shape patty about 3" across. Season with salt and pepper, flip over and create large mound of onions on top. - Place patties in heated skillet. **Smash the burger and onion with stiff spatula to form 4 1/2 - 5" patty.** Replace stray onions back on top. Season lightly with salt and pepper. - Cook stationary until edges dark brown, 1 -2 min. With spatula upside down loosen edge of patty and any stuck on. Flip patties so onion side is down and tuck stray onions under. - Add cheese to each patty, followed by top half of bun, and bottom half of bun split side down. Cover pan to melt cheese and steam bun. - Cook until edges browned and buns are steamed, 1 -2 min.
