====== Eggplant Rounds ======
  * 1/2 cup cornmeal
  * 1/2 tsp chile powder
  * 1/4 tsp dried oregano
  * 1/2 tsp salt
  * 1 eggplant sliced into 1/2" rounds
  * mayonnaise

  - Mix dry ingredients in bowl or dish
  - Lightly coat cut eggplant surface with mayo and dip into cornmeal mixture.
  - Place on baking sheet and cook in oven at 400 deg until eggplant is soft and surface is browned, about 30 min. flipping halfway or cook on grill.
